Title: Refrigeration and Labeling Requirements for Shell Eggs 
Abstract: FSIS is revising the regulations governing the inspection of eggs and egg products (7 CFR part 59) to reflect 1991 amendments to the Egg Products Inspection Act (21 U.S.C. 1034, 1037, 1046(a)). These amendments require that shell eggs destined for consumer use be stored and transported under refrigeration at an ambient temperature not to exceed 45 degrees Fahrenheit. In addition, the legislation requires that these shell eggs be labeled to indicate that refrigeration is required. Finally, the legislation requires that any shell eggs imported into the United States for consumer use include a certification that the eggs have been stored and transported at an ambient temperature of no greater than 45 degrees Fahrenheit. Because FSIS is simply revising the existing regulations to reflect statutory requirements, FSIS intends to publish these revisions to the regulations as final.
